Being the Head Cook and Bottle Washer, I usually cook about three meals before hand and freeze them, then when we go anywhere one goes in the van's fridge to thaw and the remainder go in the freezer.
The following are three easy meals and once thawed only want a couple of minutes in the microwave.
Mince and onions - a stew - sweet n sour chicken or whatever, to go with them I normally cook several portions of fried rice which I also freeze, or frozen mashed potato.
For a quick easy cheap meal in the summer, buy those boxes of mixed salads from Asda, some of them are very tasty and at a £1-00 a box they are good value, I myself prefer the pasta & prawn salad!

im head cook but kids are bottle washers isnt that what you take them for ;D
